Healthy AND delicious don’t usually go together in the same sentence, but this cottage cheese flatbread is the exception. You’re going to be surprised at how versatile and yummy this simple recipe is.
This easy homemade flatbread is awesome for making low carb sandwich wraps and pizza crust!
My husband and I really enjoy making this oven baked flatbread for lunch wraps and breakfast burritos, and trust me, he is NEVER on a diet. The first time I made this recipe, my hubby had no idea it was flourless and low carb. He even told me “These are so much better than tortillas”. It was then that I realized– maybe eating healthy isn’t so bad after all! We can do this!
Ingredients Needed
- 1 cup cottage cheese
- 2 large eggs
- Optional seasoning of choice
Place all of the ingredients into a blender or food processor and mix until smooth. You can also use a handheld immersion blender if you’d like! We prefer to season the “batter” with garlic powder and Italian seasoning, but you can season to your taste with whatever you have on had. There’s really no salt necessary as the cottage is already loaded with it.
The blending process should only take about 30 seconds. Once finished, the batter will be creamy, smooth, and a bit runny.
Pour the mixture onto a parchment paper lined baking sheet that’s been lightly greased. We use a 10×15 inch sheet pan and it seems to be just perfect, allowing the mixture to spread out enough to create a large and relatively thin piece of flatbread.
Bake in a 350° F oven for 25-35 minutes, or until golden brown and cooked through. My oven takes exactly 28 minutes, but every oven varies so much! I’ve even seen similar recipes that call for 40 minutes, so just give it a check at about the 25 minute mark and watch it closely after that.
Once finished, there are so many possibilities! This flatbread can basically be used in place of flour tortillas and pizza crust. If you’re making pizza, simply top with sauce, cheese, and toppings, and then place it back into your hot oven for a few minutes.
To make a wrap, fill it up with your favorite meat, condiments, and the fresh produce of your choice such as lettuce, tomatoes, and avocado. Roll it up into a log and cut down the center to create two decent sized wraps! I could honestly eat the whole thing myself if I’m really hungry, but it’s also great for sharing along with a small side.

- 1 cup cottage cheese
- 2 eggs
- seasoning to taste (optional)
Instructions
- Preheat oven to 350° F and line a sheet pan with parchment paper. Lightly spray the parchment paper with cooking spray or rub with a bit of oil.
- Place the cottage cheese, eggs, and seasoning (I use garlic powder and Italian seasoning) into a food processor or blender and pulse for about 30 seconds or until the mixture is creamy. You can also use an immersion blender or NutriBullet. Whatever gets the job done!
- Pour the mixture onto your prepared sheet pan and cook in the center rack of your oven for 25-35 minutes, or until golden brown and cooked through.
- Remove from the oven and allow it to cool for a few minutes.
- If using as a pizza crust, top with sauce, cheese, and your favorite toppings and place it back into your hot oven for a few minutes. For making sandwich wraps, simply load it up, roll it into a log, and cut down the center to make two generously sized wraps.
Notes
- The sheet pan I use for this recipe is 10x15 inches and seems to be the perfect size. You basically just want a dish large enough so that the cottage cheese batter can spread enough to make a thin wrap.
- When it comes to the seasoning, measure with your heart! I sprinkle in garlic powder and Italian seasoning, but anything goes. However, I recommend going easy on anything salty because the cottage cheese is already loaded with it.
- My oven cooks this flatbread perfectly at about the 28 minute mark, but every oven varies so much. Keep an eye on it!
- I've tried this recipe in my air fryer, and the results aren't as good. Although still doable, the texture was just off. If you do want to try it in your air fryer, I'd suggest cutting the recipe in half so that the batter can spread enough to create a thin wrap, otherwise it's too eggy.
- In addition to a sandwich wrap and pizza, you could also use this flatbread to make cheesy garlic bread!
